Latitude 48 Easy Back to School Recipe
Dish: Honey Lemon Garlic Chicken Thighs with Roasted Fingerling Potatoes, Asparagus, and Cherry Tomatoes
Recipe (for the segment):
- Two boneless, skinless chicken thighs per plate, marinated in ¼ cup honey, 1 tbsp fresh lemon juice, zest of one lemon, 2 minced garlic cloves, salt, and pepper.
- Marinate for at least 10–30 minutes (or overnight for more flavor).
- Roast chicken at 350°F for 15–20 minutes, ensuring it reaches an internal temp of 165°F.
- Roast potatoes at the same temperature and time.
- Add asparagus and cherry tomatoes to the pan for the final 5–10 minutes of roasting.
